We’ve not only had the opportunity to indulge in their delicious cuisine, but we also had the chance to talk more with Jason Harrison, the owner of Red Maple Catering.
Let’s start with some background….
Jason has some pretty extensive and impressive background in the culinary world. For the past 25 years, he has worked with some of the finest restaurants and hotels in the country, including Four Seasons, Fairmont, The Ritz-Carlton and Bellagio Las Vegas.
Serving as the Executive Chef of the Four Seasons, located right here in Vail, was what initially brought him to our area. He was the opening Executive Chef and developed concepts for the restaurant, branding, marketing and continued seasonal menu development and local community involvement.
While he loved his time there, he decided to leave the corporate world after the possibility of having to move to another facility. Chef loves this area so much and was ready to create something of this own, and that was when he decided it was time to start Red Maple Catering.
Over the past three years, Jason and his team have earned a fantastic reputation with locals and second home owners alike.
From in-home private chef experiences to catering après-ski receptions to providing all of the cuisine for weddings and corporate events, Red Maple Catering has become the ‘go-to’ luxury catering company in the area.
In addition to their delectable cuisine, passion for what they do and the ability to personalize menus to every type of palette is their specialty. We also love that they support other local businesses in our area.
You may remember our spotlight on Buttercrunch Farm. Well, guess what? That’s where Red Maple Catering goes for all of their produce needs. In addition, the company is a big fan of using Colorado ingredients whenever possible in their menus, including beef, lamb, buffalo, artisan cheese, poultry and more.
And, their evolving menu illustrates this to a tee, capitalizing on the freshest and most seasonal ingredients they can get their hands on.
“It’s such a great feeling to be a part of an important day in other people’s lives. We have the pleasure of providing in-home private chef experiences for families at Christmas and on very special days like a wedding,” shared Jason.
When we asked Jason what he favorite part of his role is, he said the fact that he is able to create spectacular food that is completely customized for each and every client.
“Having the ability to craft a menu based on the seasons and a client’s dietary needs and preferences is so much fun. No day is every same,” said Jason.
